Passatelli in broth
To prepare passatelli you need a particular tool, the"Iron for passatelli", a slotted spoon mounted on two horizontal handles. Boil the broth in a pot and in the meanwhile prepare the dough made of bread crumbs notmeg, flour, eggs, salt and pepper. Pass in the iron and make the passatelli, similar to vermicelli, dropping them directly into the boiling broth. When they come to the surface serve them with Parmesan.

For those who prefer a more free and informal solution or just like to enjoy and live the beach during the finest peaceful hours of the day. A take away service is available so that you can reserve directly on your menu for the morning after.
